A simple healthy snack which will take no more than ten minutes to prepare and cook.
One chorizo sausage – finely diced
One onion finely diced
6-8 basil leaves
50-75 mils of olive oil
1 clove of garlic – chopped
One red chilli - finely chopped
250 grams pasta – any pasta of choice
Cook the pasta separately by adding it to boiling water for approx two minutes. Pasta needs a great deal of room to move around while cooking so choose a large, wide pan. It is also a good idea to add a small amount of oil to the cooking water to ensure that the pasta doesn’t stick together in the pan.
Salt should always be added to the water when cooking pasta. You need to add 30g (1 tablespoons) of salt to the water when cooking pasta for two. The addition of salt is vitally important to the cooking process, as it ensures even cooking throughout the depth of the pasta. You can also add herbs and spices to taste.
Finely dice or chop and combine all remaining ingredients. Using a large frying pan lightly fry for a further three to five minutes, gradually adding in the pasta and a small amount of stock from the pasta as you do.
The pasta is the meal, the chorizo sausage and herbs the flavouring. This dish may also be prepared by substituting the chorizo sausage with poultry or any other meat of your choice. As a variation you might also like to add grated Parmesan cheese or a local cheese of your choice on top of the dish.
