Chilli Garlic & Lemon King Prawns by Pritpal from La Diva restaurant.
250g of raw peeled king prawns (slit half way along the back/arch of the prawn)
A good chilli sauce or a pinch chilli flakes
Tsp of tomato paste
Clove of garlic (crushed)
200ml of passata or tinned tomatoes
Juice of half a lemon
Pinch of coriander
Seasoning to taste
Heat a couple of tablespoons of oil in a pan and sauté the garlic for a minute.
On a medium heat add the prawns, chilli flakes if you have them if not a pinch of chilli sauce, tomato paste and passata and cook for a further 3-4.
At the last minute add the lemon juice, seasoning and coriander and mix together then transfer onto a warm plate and serve immediately with a side salad and toasted bread.
